This is a great recipe for whatever fruit is in season...peach ice cream, strawberry ice cream, raspberry ice cream, etc.
Resist the urge to fold in diced fresh fruit at the end...these chunks will freeze into hard ice. ...Just stick to the mashed/blended fruit.
Combine and stir:
1-1/2 cups mashed fresh fruit (raspberries, strawberries, peaches--peeled) --Could be done in food processor
Pinch of salt
1 Tbl. lemon juice
1-1/2 cups sugar
Whip 1 cup heavy cream until stiff and whisk into fruit. (Don't leave clumps of whipped cream.)
Add 1-1/4 cups half-and-half
Freeze in ice cream maker.
This is yummy fresh out of the ice cream freezer, but also scoops soft and nice if kept in a covered container in the freezer.
