1 cup flour
2 tsp. salt
1/4 tsp. cayenne pepper
3-4 large boneless, skinless breasts--pounded and cut into large pieces
Oil for shallow frying
Sauce:
1/4 cup packed brown sugar
1/4 cup honey
1/4 cup bottled lime juice
1 Tbl. soy sauce
1/4 tsp. curry powder
4 Tbl. butter, melted
In a bag, combine flour, salt, and cayenne pepper. Add chicken pieces and shake to coat. Brown chicken in oil--don't cook until fully done inside, as it will bake more in the oven. When pieces are crispy brown on the outside, remove to a shallow baking dish. Whisk together sauce ingredients in a bowl and pour over chicken. Bake uncovered at 350 degrees for 15-20 min. until chicken is no longer pink (don't over-bake, or it will be dry). After removing from oven, turn chicken pieces over so other side can soak up some sauce too. Can be served with rice.
