Fresh Peach Cobbler

This makes enough for 8x8 pan.
Can be doubled for 9x13 pan.

Blanch, peel, and dice peaches...you'll need 3 cups diced peaches.  

Toss with 1/2 cup sugar and 2 Tbl. cornstarch.  
Put peaches in greased 8x8" baking dish (or similar size).  

Whisk together:
1 cup flour
3/4 cup sugar
1 tsp. baking powder
1/2 tsp. salt

Then stir in 1 egg and combine until crumbly.
Sprinkle mixture over peaches in baking dish.
Melt 1/2 cube real butter and drizzle over the top.
Bake at 325 degrees for about 40 min. until golden brown on top...the crusty top is the best!  Let sit for 1/2 hour or so before serving. Serve warm with ice cream, whipped cream, or half-and-half!
