Frozen Peach or Strawberry Pie
Although using homemade ice cream in a pie crust would be creamier, if you don't have an ice cream maker, this is a close second! This recipe makes 2 pies.
1 8-oz. pkg. cream cheese--softened
1 14-oz. can sweetened condensed milk
3 cups blended strawberries or peaches--blanched and peeled
1 Tbl. lemon juice
1 8-oz. container whipped topping (like Cool Whip)
2 pre-made graham cracker or Oreo pie crusts
In a bowl, beat cream cheese until fluffy. Gradually add sweetened condensed milk, blended fruit and lemon juice. Fold in whipped topping. Pour into crusts. Freeze until firm. (Could add additional fruit to top of pie for garnish.) Remove from freezer and allow to soften a bit before serving time.
