Orange Marshmallow Fruity Fluff Salad

This makes a large amount, making it great for neighborhood picnics or family reunions.  

6 oz. orange juice concentrate
1-1/2 cups water
1 cup pineapple juice (from drained fruit...see below)
6 Tbl. cornstarch
1/2 cup sugar
1 small pkg. orange jello

Mix and cook until thick and bubbly.  Allow to cool for 1 hour in the fridge. (Don't let it cool so long that it sets up though!)  When cold, but still syrupy, fold in the following:

2 medium containers whipped topping
3 cups mini marshmallows
2 cans mandarin oranges, drained
2 20-oz cans crushed pineapple, drained
1 cup coconut (or less, as desired)

Stir and pour into serving dish to chill and set until serving time.  (Left-overs freeze well in tiny containers for lunch later!)
