Triple Chip Blondies

1 cup (2 cubes) margarine
2 cups packed brown sugar
2 tsp. vanilla
2 eggs
2 cups flour
2/3 cup milk chocolate chips
2/3 cup white chocolate chips
2/3 cup peanut butter chips, semi-sweet OR butterscotch chips 

Combine margarine with sugar.  Add vanilla and eggs.  Add flour and all chocolate chips.  Line a 9x13 pan with parchment.  Press mixture into pan and bake at 350 degrees for 25-30 min until golden and done.  Allow to cool completely.  Lift parchment out of pan.  If desired, when cool, top with Chocolate Drizzle.  Allow to cool in fridge to set.  Cut into small bite-size squares.


For jelly-roll size pan for a crowd:
Spray a jelly-roll pan with non-stick spray.  Line with parchment (up over edges) and spray parchment as well.  Double the recipe (it will fill pan completely) and bake for about 43 min.
