1/2 cup (1 cube) margarine
1/2 cup (1 cube) real butter
1 cup packed brown sugar
1 cup regular white sugar
2 eggs
2 Tbl. milk or sour cream
2 tsp. vanilla
3 cups flour
1 tsp. baking powder
1 tsp. soda
1 tsp. salt
1 tsp. cinnamon
2 cups quick oats (or 1-1/2 cups quick oats + 1/2 cup "Coach's Oats")
12 oz. (about 2 cups) chocolate chips
1 cup coconut
(Chopped pecans, if desired)
Use heavy mixer. Cream butters and sugars together. Add eggs, milk and vanilla. Mix in dry ingredients, chocolate chips and coconut. Use parchment paper on baking sheet. Use small cookie scoop to make mounds. Bake at 350 degrees 'til barely golden around edges (10-11 min on a stone).
