Veggie-Chicken Chow

This is like stuffing, gravy, chicken, and veggies...all combined into a yummy, quick casserole!

1 6-oz. pkg. Stuffing Mix
1 cup hot water

Sprinkle half of the dry stuffing mix in the bottom of a 9x13 baking dish.  Set aside.  Add hot water to the remaining stuffing mix.  stir, just until moistened and set aside.

5-6 chicken tenders or 2-3 breast halves (raw, could be frozen)--diced into 1" pieces

Put raw chicken over dry stuffing mix in baking dish.

Mix the following together:
1 can cream of chicken soup
1/3 cup sour cream
1 can mushrooms, drained
1 bag frozen, mixed veggies--rinsed and drained.  (OR you could make your favorite mixture of veggies (2-3 cups): steamed, diced carrots; peas; corn, etc.)

Spread this veggie mixture over the raw chicken.  Top with the prepared stuffing.
Bake at 375 degrees for 20-30 min or until chicken is cooked through.
