2-1/2 cups boiling water
1-1/4 cups rolled oats (not quick oats)
1/4 cup vegetable oil
1-1/2 Tbl. yeast...dissolved in 1/2 cup warm water
3/4 Tbl. salt
3/4 cups packed brown sugar
2 cups whole wheat flour
3 cups white flour (+ more as needed)
Pour boiling water over oats. Let sit. When cooled enough, add wheat flour, sugar, and yeast mixture. Add salt and oil. Mix well, adding remaining flour. Dough should form a ball and pull away from sides of mixing bowl. Knead a few minutes. Let rise. Punch down and form into 2 regular-size loaves (or 3 med.-size loaves). Roll out and shape loaves. Place in greased loaf pans. Let rise until double. Bake on middle rack at 350 degrees until golden on bottoms and tops.
