Pumpkin Waffles

(Makes 4-5 large rounds)
2 cups flour
2 Tbl. baking powder
1 Tbl. cinnamon
1 Tbl. sugar
1/2 tsp. nutmeg
1/4 tsp. salt
4 egg whites
4 egg yolks
1-1/2 cups milk
1 cup canned pumpkin
3/4 cup (1-1/2 cubes) butter, melted
1 Tbl. vanilla

Combine flour, baking powder, cinnamon, sugar, nutmeg, and salt.  Set aside.
Beat egg whites in separate bowl until they form peaks.  Set aside.
In another bowl, combine egg yolks, milk, pumpkin, melted butter, and vanilla.  Mix with mixer.  Add dry ingredients and mix until combined.  Gently fold beaten egg whites into the pumpkin batter.  Spray waffle iron with non-stick spray and cook batter, using a heaping cupful of batter for each waffle.

Serve with Buttermilk Syrup
