Makes 2 loaves
3 cups warm water
1-1/2 Tbl. yeast
4 tsp. salt
6-1/2 cups flour
Soften yeast in warm water. Add salt and most of flour, stirring with a wooden spoon to blend. Dough should be sticky and stretchy. Add more flour as needed. Spray underside of plastic wrap with non-stick spray and cover bowl. Let rise in warm room for 5-8 hours. Divide dough and shape into 2 round loaves on pieces of parchment paper. Allow to rest for 45 min. Preheat oven to 450 degrees. Pre-heat baking stone for 15 minutes. Carefully lift parchment and loaves onto pre-heated stone. Return to oven and bake until crusty and brown. (Don't take out too early.) Cool on wire rack.
