This is a fun sheet-cake size bar that's great for scouts, youth activities, or summer reunions & picnics!
28-30 whole sheet-size graham crackers (3 packages)
2 cups milk chocolate chips, divided
16 oz. mini marshmallows
1 cube butter, divided
1/4 cup milk
Line a jelly-roll size pan (sheet cake pan) with parchment paper. (If you want the parchment to stick to the pan, spray the pan with non-stick spray and then press the parchment down on top of it! You don't need to spray the top of the parchment.)
Arrange about 2 of the packages of graham crackers in a single layer to completely cover bottom of pan, breaking crackers in half to fit.
In a bowl, combine 4-3/4 cups marshmallows with 4 Tbl. butter and the milk. Microwave for 45 seconds and stir until smooth. Add one cup of chocolate chips to the mixture. Allow to sit for a bit in the hot marshmallow mixture and then stir 'til smooth. (If you need to, you can put it back in the microwave for a bit to melt some more.) Pour then spread the chocolate mixture over the top of your graham cracker layer--smoothing to the edges so everything is covered evenly. Set aside.
In a mixing bowl, coarsely break the remaining graham crackers. Melt the remaining 4 Tbl. butter; toss it with the broken crackers until absorbed. Add remaining marshmallows and 1 cup chocolate chips. Toss til combined. Spread mixture evenly over the chocolate layer, all the way to the edges.
Bake at 350 degrees for 8-10 min. until the marshmallows begin to turn a light brown on the edges. Set whole pan aside to cool (not chill in fridge). Cut into bars or squares. Store extra in an air-tight container.
