Coconut Caramel Squares

1/4 cup (1/2 cube) margarine, melted
1 cup packed brown sugar
2 large eggs
1/2 cup chopped pecans
3/4 cup flour
1 tsp. baking powder
1/4 tsp. salt
1 cup coconut

Mix together melted margarine and brown sugar.  Beat in eggs.  Mix in pecans, flour, baking powder, salt and coconut.  Pour into small (9x9" square or similar size) baking pan, lined with foil or parchment and sprayed with non-stick spray.  Bake at 350 degrees for 20-25 min.  Cool.

Icing:
1/4 cup (1/2 cube) margarine
1/2 cup packed brown sugar
2 Tbl. cream or milk
1 cup powdered sugar
1/2 tsp. vanilla

Combine margarine, brown sugar, and cream or milk in saucepan.  Bring to a boil over medium heat and simmer 2 minutes, no need to stir.  Allow to cool until lukewarm.  Mix in powdered sugar and vanilla.  (If too stiff, add a bit more milk until it's soft enough to spread.)  Spread over cooled bars.  Let set.  Lift out of pan and cut into small squares.
