Broccoli Salad

Dressing: (whisk and chill)
1 cup mayonnaise
1 Tbl. red wine vinegar
1/4 cup sugar

1 lb. broccoli florettes, cut in bite-sized pieces
1/2 cup grated mozzarella cheese or monterey jack
1/2 lb. bacon, sliced while still partially frozen, then cooked and drained
1/4 cup craisins (not shown in photo)
3 Tbl. sunflower seeds (no shell!)

Blanch broccoli about 4 min. so it will not be so raw-tasting (and it brightens the color too!) Rinse in cold water and be sure it's chilled before making salad.
Stir ingredients together and chill.
