Thick & Soft Sugar Cookies

1 cup real butter (2 cubes), softened  (Butter holds cookie-shape best, but margarine can be used)
1-1/2 cups sugar
1 cup sour cream
2 tsp. vanilla
1 egg
1/4 tsp. lemon extract
orange zest (optional)
1 tsp. baking powder
1 tsp. baking soda
5 cups flour

Use large mixer for this heavy dough.  Mix butter with sugar.  Add sour cream, egg, vanilla, and extract.  Mix in zest and dry ingredients.  Chill dough for at least 3 hours or overnight.  Roll out to about 3/8" onto lightly-floured wax paper (so you don't need to add a bunch more flour to the dough).  Cut with cookie cutters.  Bake on silicone mat at 350 degrees for 11-12 min.  Cool before frosting.

Cream Cheese Frosting for Sugar Cookies
(This recipe makes more than enough frosting needed for the cookies you'll make)
1 cube margarine (I use Blue Bonnet)
1/2 cube (4 oz) cream cheese, softened
1 tsp. vanilla
1 Tbl. milk
5 cups powdered sugar
Food coloring

Use big mixer to whip margarine and cream cheese together.  Add rest of ingredients and beat 'til smooth.  Add milk or more powdered sugar as needed to improve thickness.
