Red Applesauce

This recipe will make about 15 pints
Cook in one of the big black canning pots.

10 lbs. Jonagold
10 lbs. Jonathan
1/2 cup water
1/2 cup lemon juice
2 cups white sugar
1 cup packed brown sugar
1 tsp. cinnamon

Peel, slice, and core apples.  Simmer all ingredients, covered for a long time.  Stir occasionally to prevent burning on bottom.   Put in pint jars, wipe rims.  Use steamer method for 20 min.
