Apple Pie Filling

Best apples to use: Jonathan, Jonagold, Yellow Delicious...whatever you've got!
This recipe makes a little less than 3 quarts.  Double-recipe makes 5 quarts
1 quart of filling = 1 pie (9-10")
1 pint of filling = 1 pie (8")

4-1/2 quarts peeled, sliced apples (takes about 6-8 lbs)
3 cups sugar
1/2 cup water
4 Tbl. tapioca granules
2 tsp. cinnamon

Simmer all together until apples are cooked, but not mushy.
Put in jars. Wipe rims. Put on lids and rings.
Put in steamer for 20 min.
