Mini Molten Chocolate Cakes

Generously brush bottom, sides, and around rims of 7 muffin tins with softened butter.  Dust regular sugar in them 'til all buttered surfaces are covered.  Set aside.

Melt 8 oz. (about 1-1/4 cups) bittersweet or semi-sweet chocolate chips by microwaving in glass dish at 30-second increments on 50% power.  Stir after each microwaving, being careful not to overheat.  Continue to stir until melted.  Set aside.

With mixer:
4 Tbl. softened butter
1/3 cup sugar
1/8 tsp. salt
3 large eggs
1/3 cup flour.

Pour in warm, melted chocolate and stir vigorously by hand until smooth and creamy.  Bake at 400 degrees for 10-11 min.  NO LONGER...even if you're tempted to leave it longer!  Let stand for 10 min.  Carefully remove from pan and invert on serving dishes. Sprinkle with powdered sugar and serve with whipped cream and berries or ice cream.
