2 egg yolks
1 cup milk
1 cup flour
1 Tbl. sugar
1/4 tsp. salt
2 tsp. baking powder
1/4 cup vegetable oil
Preheat waffle iron. Whip egg whites until firm peaks form. Set aside. In another bowl, mix yolks, flour, milk, sugar, salt, and baking powder. Mix with mixer. Stir in vegetable oil. Don't overmix. Fold in egg whites and whisk. Pour batter (About 1-1/3 cups) into greased waffle iron and cook until golden and crispy...longer than you think. Makes about 3 large circles, depending on size of waffle iron.
