Buttermilk Cornbread or Muffins


This corn bread is great for breakfast with some butter and syrup or for dinner, served with soup or chili!

1 cube butter, melted
2/3 cup sugar
2 eggs
1 cup buttermilk (or 1/2 cup sour cream mixed with 1/2 cup milk)
1/2 tsp. soda
1 cup cornmeal
1 cup flour
1/2 tsp. salt

Mix sugar into melted butter.  Beat in eggs.  Add buttermilk and soda.  Stir in cornmeal, flour, and salt.  It's okay if there are a few lumps.  Pour in greased 8" square pan.  Bake at 350 degrees for 30-40 min.  Or make muffins and bake for about 16 min.
