Aebleskivers are a traditional Danish dish. They are like a pancake ball...good with syrup, jam, or fresh fruit and whipped cream! A traditional cast iron Aebleskiver pan is required to make these. It is best to let it heat on the stove over med-low heat plenty before adding batter to the pan. You also need to have a pastry dish and some oil or butter-flavored shortening to grease the pan plenty in between cooking each ball. This recipe makes enough for about 8 people, if serving with other things in a breakfast meal.
3 eggs, separated
1 cup sour cream
2 cups whole milk
2 cups flour
2 Tbl. sugar
1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
Bowl #1:
Beat egg whites until stiff and set aside.
Bowl #2:
Mix egg yolks, sour cream, and milk together.
Bowl #3:
Whisk together flour, sugar, salt, baking soda, and baking powder
Add yolk and milk mixture to dry ingredients, stirring with spatula. Fold beaten egg whites into mixture. Set aside while pan is heating. Grease generously. Fill each circle 3/4 full of batter. When bottom is browned, use a skewer to turn partially over and let batter run into bottom of pan. Continue to cook and turn, forming a ball. Keep warm in an oven while continuing to cook others. Serve hot with desired toppings!
