This recipe could also be made with regular white sugar, if a clearer (less-brown) appearance is desired.
1 cup pineapple juice
1/4 cup brown sugar
2 Tbl. cornstarch
2 Tbl. vinegar
2 tsp. soy sauce
1 Tbl. ketchup
3 drops red food coloring (optional)
2 Tbl. peach-pepper jelly (optional, for an extra kick)
Whisk all ingredients together in a small saucepan before turning heat to medium. Continue to whisk until thickened and bubbly. Great served with egg rolls!
