2/3 cup sugar
1/4 cup cornstarch
1/8 tsp. salt
2-1/3 cups whole milk
4 large egg yolks
2 Tbl. real butter
1 tsp. vanilla
In large saucepan, off heat, whisk together sugar, cornstarch, and salt. Add milk, 1/2 cup at a time, whisking thoroughly to dissolve cornstarch. Whisk in egg yolks completely. Turn heat on to medium after mixture is completely whisked. Continuing to whisk constantly, cook mixture until the first large bubbles form and sputter. Reduce heat to low and continue to whisk for 1 minute. Remove from heat and stir in butter and vanilla. Pour into serving dishes and spread plastic wrap over surface to prevent skin from forming. Chill. Serve with whipped cream, bananas, or use in cream puffs.
