Sausage Egg Breakfast Casserole

1 lb. mild sausage, cooked, crumbled, and drained
8 slices of bread (or 10 thin slices)--break into bite-sized pieces
10 extra large eggs (or 12 large eggs)
2 cups milk
2-1/2 cups grated cheese
1/3 cup additional grated cheese for sprinkling on top

Preheat oven to 350 degrees.  Grease 9x13" glass baking dish.
Cook sausage and set aside.
In large bowl, whisk eggs and milk together.  Stir in cheese and bread pieces.
Pour bread/egg mixture into greased dish.  Sprinkle sausage on top.  Top with 1/3 cup additional grated cheese.  Cover with foil and bake for 1 hour.  Let stand a few minutes before serving.  May be served with salsa, avocado, sour cream, or black bean salsa, if desired.  Makes 10 large pieces.
