Black Bean Salsa
1/2 - 1 can black beans, rinsed and drained
2-3 small tomatoes, diced
1/2 - 3/4 cup frozen petite corn, rinsed and drained
Cilantro, sliced thinly
Salsa (to juice it all together, as desired)
Lime juice to taste
Salt to taste
Cumin to taste
Barbecue Ranch Dressing: blend in blender
1 cup mayonnaise
1/3 cup sour cream
1/3 cup milk, + more as needed to thin
Cilantro (about 1/4 cup, before chopped)
1 Tbl. lime juice
1 tsp. vinegar
1 tsp. sugar
1/2 tsp. salt
1/8 tsp. cayenne pepper
1/4 tsp. cumin
1/3 - 1/2 cup favorite BBQ sauce
For a Crowd:
Figure about 1/5 lb. (raw weight) per person.
