Heat 1-2 Tbl. sesame oil in skillet.
Add 2-3 raw chicken breast-halves, finely chopped.
Saute until almost done, but still a little pink.
Whisk together and stir in:
3 Tbl. soy sauce
2-1/2 Tbl. rice vinegar (or regular vinegar works too)
2 Tbl. honey
1/8 tsp. ground ginger
Then add:
1 mango, peeled and finely chopped
2 Tbl. chopped fresh cilantro
Cashews (optional)
Cook until sauce is thickened. Spoon into large lettuce leaves or serve over rice.
