Marinate 2 or 3 large breast-halves for a while:
Marinade:
2 eggs
2 Tbl. soy sauce
2 tsp. flour
2 tsp. corn starch
1 tsp. sugar
1/2 tsp. salt
Meanwhile, mix up lemon sauce in a small bowl and set aside:
7 Tbl. lemon juice
6 Tbl. sugar
1 tsp. salt
4 Tbl. water
4 tsp. corn starch
Yellow Food Coloring (optional)
After chicken has marinated, fry in a bit of oil (discard marinade). (Frying in 1-2 Tbl. sesame oil gives a nice Asian taste!) You could even add some sliced carrots or other veggies if you'd like! Don't overcook the chicken, as it gets dry. When it's about done, lift it out of the pan and slice it (it's okay if it's a bit pink...it will finish cooking with the lemon sauce). Pour lemon sauce mixture over the top and continue to stir-fry until thickened and bubbly. Serve over rice or noodles.
