Spanish Rice (Beef)

Brown in pan:
1 lb. ground beef
1 Tbl. dried onion
1/2 - 1 green or red bell pepper, sliced (whatever amount you like)

Add:
1 tsp. chili powder
1 can crushed tomatoes (or 1 can diced tomatoes, blended) + water to = 4-1/2 cups
1-3/4 tsp. salt
cilantro (optional)

Bring to boil and add 1-1/2 cups long-grain white rice.

Cover and simmer on low 25-30 min. Transfer to greased baking dish and top with grated cheese. Cover with foil. Bake at 350 'til cheese is melted and rice has absorbed excess water, about 15-20 min. Serve with tortilla chips.
